It's officially fall here in the upper midwest. And so I decided that this weather calls for some great chili! We ate this chili today for lunch, and it really hit the spot. My sister-in-law passed this recipe along to me, and it's become one of our favorites. What's even better is that it's a crock pot recipe! So great. So, without further ado, here's the recipe for:
Quick and Easy Crock Pot Chili
1 lb. ground beef, browned
1 medium onion, chopped
1/2 c. green pepper, chopped
1 can diced tomatoes, with juice
1 can chili beans, undrained
1 can tomato soup, undiluted
2 Tbsp. chili powder (or more if you like it spicier)
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. black pepper
shredded cheddar cheese
Brown the ground beef, onions, and green peppers. Drain the meat mixture. Pour meat mixture into the crock pot. Add all other ingredients except cheese. Stir thoroughly. Cook on low for 4-5 hours or on high for 2-3 hours. The longer it cooks the better it gets, too!
I like to top my chili with shredded cheese. I even added some chopped, raw onions to the top of my serving. I liked the crunch. It doesn't hurt to serve cornbread alongside, either. In fact, it just enhances the whole experience! If you really like it, double the recipe like I did for tasty leftovers. Enjoy!
